STUFFED ACORN SQUASH
2 Medium acorn squash
1/2 C brown rice
1 16 oz pkg Maple flavored pork sausage
1 3oz can sliced mushrooms, drained (opt)
1/2 tsp salt
Preheat oven to 350. Cut each squash lengthwise in half, discard seeds. Place squash halves, cut side down in a 12x8 baking dish. Bake 45min. Meanwhile, prepare rice as directed on box.
In 10inch skillet, cook sausage til brown. Drain, and place in medium bowl. Toss sausage with uncooked egg, mushrooms, and cooked rice.
Turn squash halves cut side up in baking dish, sprinkle with salt. Spoon sausage mixture into squash halves. Cover with foil, return to overn & bake 15min longer or until tender. Serve immediately.
